Carmine’s puts a lot of stock in tradition. For one thing, the New York-based Italian restaurant chain has to open every location on a Tuesday (in this case, Aug. 3 in Northwest D.C.). Also, no Carmine’s can be built without a neon “Cocktail Lounge” sign in the window (D.C.’s is already in place).
